My Daughter’s Oatmeal Bake Is My New Favorite Breakfast 

Never thought I’d get this excited about oatmeal, but here we are.  

Last week my wife and I were visiting our kids and grandkids, and one morning my daughter offered me a piece of her Biscoff oatmeal bake for breakfast. I took a bite. It was delicious. I immediately wanted the recipe

That probably sounds a little ridiculous because it’s an oatmeal bake. As simple a meal as one could possibly imagine. I felt foolish having never heard of or tried one before now, but take my word for it, it’s so good.  

Even better, if made right it’s healthy. Or well, healthy-ish. As someone who is diabetic, and trying to improve my nutrition and fitness, this meal checked a lot of boxes. Packed with fiber and protein to balance the carbs – and full of flavour.  

My First (but definitely not my last) Oatmeal Bake

The first time I made it, I was amazed at how simple it was. No fancy equipment, no complicated steps – just mix in a baking dish and bake. I added chia seeds and ground flaxseed for a little health boost; it helps keep my blood sugar stable and added a nice texture too. We went with a Raspberry Vanilla flavour this time but there are so many options.

It’s quick, simple, easy to prep for the week, and leaves you feeling full and satisfied. 

Here’s the recipe that’s now a staple in my kitchen: 

Raspberry Vanilla Oatmeal Bake

Prep Time: 10 minutes
Cook Time: 30 minutes

Equipment

  • 1 8×8 baking dish greased or lined

Ingredients

Dry

  • 2 bananas mashed
  • 2 cup oats large flake
  • ½ cup protein powder vanilla
  • 1 tbsp chia seed
  • 1 tbsp flaxseed ground
  • 1 tsp baking powder

Wet

  • 1 ½ cup almond milk unsweetened
  • 2 tbsp honey
  • 1 tsp vanilla extract

Top

  • 1 ½ cup raspberry frozen
  • ½ cup greek yogurt vanilla

Instructions

  • Preheat over to 350f
  • Add wet and dry ingredients to baking dish and stir until completely combined.
    2 bananas, 2 cup oats, ½ cup protein powder, 1 tbsp chia seed, 1 tbsp flaxseed, 1 tsp baking powder, 1 ½ cup almond milk, 2 tbsp honey, 1 tsp vanilla extract
  • Warm frozen raspberries in microwave for approximately one minute.
    1 ½ cup raspberry
  • Add alternating dollops of raspberries and yoghurt to top of mixture and swirl them together to make a marble effect.
    1 ½ cup raspberry, ½ cup greek yogurt
  • Bake for 30 minutes and then cool for 5-10 minutes before cutting.

Endless Flavour Possibilities 

What I think I love most about this oatmeal bake – besides how good it tastes – is how versatile it is. My daughter’s was Biscoff flavoured. Ours Raspberry and Vanilla. I’m already planning future options… blueberry lemon, peach, apple and cinnamon, chocolate and almond.  

My wife and I agree this recipe will become a staple in our home.
